- Laver et enlever le haut des aubergines et les couper en tranches d’un cm d’épaisseur
- Frotter la plancha avec un peu huile d’olive et faire griller les tranches d’aubergine en les salant, les tranches d’aubergine doivent commencer à colorer avant de les réserver dans un plat
- Éplucher et émincer l’oignon, éplucher et presser les gousses d’ail
- Faire revenir l’oignon et l’ail avec l’origan dans un filet d’huile d’olive dans une sauteuse
- Préchauffer le four à 200°
- Une fois l’oignon translucide ajouter les 2 boites de pulpes de tomate, la pincée de sucre, sel et piment d’Espelette et laisser cuire à feu doux pendant 20 mns
- Dans un plat à gratin disposer une couche d’aubergine, recouvrir d’une couche de sauce tomate et saupoudrer de parmesan
- Recommencer autant de fois qu’il vous reste des aubergines en finissant par le parmesan et rajouter les cossettes de mozzarella
- Enfourner pour 30 mns
- Servir chaud
